We display Assessments on un-published pages in the Calendar because you have chosen to publish those Assessments. We thought it would be confusing to have more than one way of un-publishing an Assessment (e.g. from the Assessments tab you choose to publish an Assessment, yet it is still not available to students because you accidentally place it on an un-published page).

That being said, I would love to hear more about why hiding these Assessments from the calendar would be best for you. Thanks for the feedback!
